This is a joy to read and to use. Many original and practical tips. recipes are easy to follow and the results subtle, different, and enjoyed by the whole family.the recipes seem to be foolproof and also quite easily adapted once you get the idea of the flavours used. since viewing my copy at least five of my friends have bought a copy to keep for themselves.
This book has enriched our lives a lot. It is the first vegetarian cook book that I have found where recipes are easy to follow and really work. So often I try recipes that somehow are too complicated and don't really work but having tried almost all the recipes of this book I can't even find one that doesn't. It is a delight to cook these dishes and my family and my friends love it. Living in a country where meat is a big part of the diet being a vegetarian is sometimes not so easy. But guess what. Whenever I have friends over for dinner and I cook out of this book there is always the same response"With such beautiful dishes you don't even need meat and we didn't miss it at all." But yet, I think that the recipes from the book would also be nice dishes served with meat.
It just works and there is one only word that comes to me thinking about the book DELICIOUS!
Conscious Cuisine is the best cookbook I have picked up since Anna Thomas' Vegetarian Epicure. As a young woman, I spent a formative year living in South India. It was there that I declared my vegetarian nature to both myself and my new Brahmin friends. While I feasted on the best foods of my life, I never imagined that I would be able to prepare an authentic Indian meal by myself. All that changed when I opened Damyanti Gajjar's Conscious Cuisine. For the first time, I found vegetarian recipes from India that I could understand and even contemplate cooking. I managed to read the entire cookbook in one sitting. I was mesmerized, almost able to taste the foods I was reading about. I went to the store and bought all the ingredients that were not already in my kitchen, including a small mortar and pestle, and then set about cooking. My first attempt, the millet vegetable dish, was a great hit. I used sweet potato instead of regular white potato, and loved the result. The easy recipe for paneer amounted to boiling milk, adding lemon and sifting the curds from the milk water, and done! Now, I am cooking with real sticks of cinnamon, grinding coriander and making ginger paste, as though I have been doing it all my life.
For me, the key to making this recipe book work is to gather all the ingredients and have them on hand when preparing the recipes. For those more concerned with cooking for a healthy life, Conscious Cuisine provides both life giving recipes as well as ayurvedic lessons on herbs that help prevent disease. And with a little organization of spices, the job of preparing healthy, Indian cuisine is fast and fun!
